Dark chocolate · blackcurrant · cane sugar

Bigger body than the Yirgacheffe, denser and more chocolate-forward. Blackcurrant up front, cane sugar in the middle, dark cocoa on the finish. Roasted slightly darker — pulls into a syrupy espresso that doesn't need milk to hold its shape.

Where it's from

Daye Bensa is run by brothers Asefa and Mulugeta Dukamo, who built one of the first speciality-grade washing stations in Sidamo in 2015. The anaerobic process — 72 hours sealed under CO₂ before drying — emphasises the blackcurrant and cane-sugar notes that were already in the green bean. Bigger lot than usual; we're roasting through it until July.
